I love these crispy butternut bites with added spelt flakes for that extra crunch. Perfect as a snack or part of a main meal.
INGREDIENTS
Wet
1/3 cup chickpea flour
1/3 cup of plant milk
4 tbsp olive oil
1 tbsp ground flaxseed
1 tbsp curry powder
1 tbsp paprika
1/4 tsp garlic powder
1/2 tbsp chilli powder
1 tsp salt
Dry
1/2 cup spelt flakes
1/4 bread crumbs
1 tbsp nutritional yeast
1/2 tsp salt
METHOD
Preheat oven TO 180C
In a bowl add chickpea flour, curry powder, paprika, garlic powder, ground flaxseed, salt and stir.
To the mixture add milk and oil and stir again
In a separate bowl make the dry crunch mixture, that's nutritional yeast, bread crumbs, spelt flakes and salt then stir
Piece by piece add butternut pieces to wet mixture, then dry mixture and place on a baking tray
cook for around 20 mins and enjoy
