FRESH SPRING ROLLS



INGREDIENTS

carrots

coriander

cucumber

avocado

mint

red cabbage

rice noodles

rice paper


METHOD

Fill a large bowl with warm water. Dip one rice paper wrapper into the warm water for 10 second to soften.


Lay the rice paper flat on a plate. In a row across the centre place a rice noodles, avocado, coriander, mint, carrots, cabbage and lettuce, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper.


Peanut sauce

1 cup peanut butter

2 tbsp coconut aminos

1 tbsp chilli flakes

1 tbsp maple syrup


METHOD

In bowl mix all ingredients together
