200g jackfruit
6 medium potatoes
1 tbsp fresh chives
1 clove garlic
1 tsp kelp powder
1/2 chilli pepper (diced)
2 flax eggs
1 1/2 tsp salt
1 tsp black pepper
1 cup chickpea flour
1 1/2 cups breadcrumbs
1 cup aquafaba
Oil for frying
METHOD
Peel, boil and mash the potatoes
To the mashed potatoes add jackfruit, garlic, chives, kelp powder, chilli, salt, black pepper, flax egg and mix until fully combined
shape the mixture into patties and dip into aquafaba then into chickpea flour then coat with breadcrumbs
Place frying pan on a medium heat and add oil, once warm add the fish cake and lightly fry until golden brown and serve
