MANGO STICKY QUINOA




INGREDIENTS


1 cup Quinoa

3/4 cup coconut milk

4 tbsp maple syrup

1/2tsp salt

1 mango


METHOD

Wash quinoa throughly and leave to soak for around 4 hrs


Drain the quinoa and steam for around 20 mins until soft and fluffy


In a separate pot combine and warm coconut milk, maple syrup and salt. cook until warm (around 5 mins) once warmed remove from heat and set aside.


Add quinoa to half of the warm milk mixture, cover and leave to sit and absorb the liquid for around 20 mins


Serve quinoa on a plate with sliced mango and a good serving of the extra warm coconut milk mixture.
