I literally eat pancakes for breakfast, lunch and dinner. sweet or savoury they are absolutely delicious.
1 cup spelt flour (I used rude health sprouted spelt flour)
2 cups almond milk
1 tbsp of olive oil
1 tbsp maple syrup
Sprinkle of salt
In a bowl combine flour, milk, olive oil, maple syrup and salt until smooth.
Place frying pan on a medium heat and warm a little oil. Pour pancake mixture into frying pan.
Cook your pancakes for 1 min on each side until golden, keeping them warm in a low oven as you go.
Serve with lemon wedges or your favourite filling. Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to 2 months.
