A Nutritious Spicy sweet potato and black bean stew made with peanut for a fuller and more delicious flavour.
INGREDIENTS
3 tbsp olive oil
1 large onion (cubed)
3 cloves of garlic (minced)
1 thumb of ginger (minced)
1 scotch bonnet pepper (minced)
1/4 tsp mustard seeds
11/2 turmeric powder
1/2 cumin powder
1/4 garlic powder
1/4 ginger powder
6 cardomon pods
400ml passata
600ml vegetable stock
11/2 cups sweet potato (cubed)
400g black eye peas
3 tbsp smooth peanut butter
1 handful fresh coriander
Salt ( to taste)
Pepper (to taste)
METHOD
In a saucepan heat oil on a medium heat once warm add mustard seeds and cook until popped (2 mins) then add onions and cook until browned.
Add garlic, scotch bonnet and ginger and cook for 2 mins
Then add all the spices and cook for 2 mins
Add vegetable stock , pasta and peanut butter and stir
Next add sweet potato and black eye beans, turn on a low heat and cover and cook for 20mins
Add salt and pepper to taste, top with fresh coriander and a squeeze of lime
